Convection drying is much preferable than the other drying sytems since it absorbs humudidity equally from every point of the food and reduces aflatoxin occurence. In convection drying systems, required temperature in order to evaporate the water is transfering by a gas or generally by air. Hot air goes through inside, over and between the foods. This application is known as the hot air drying technique.
